Ingredients:
1 lb fillo dough
1 1/2 to 2 lb pecans, finely chopped
1 TB sugar
1 lb rendered butter
Heavy Syrup (recipe follows)
Preparation:
Combine nuts and sugar together. Add 1 Tb rose water, if available. Brush baking pan 12x18 inches with melted butter. Place 4 pastry sheets, each brushed generously with butter, on top of the other on the table. Place nut mixture across one end of the dough. Fold end over about 1 inch so as tohold filling in and start to roll. Place rolled dough in baking pan and brush with butter. Continue making rolls and place in pan each parallel with the next. Cut each roll in the pan on the angle. Be sure the tops of each roll is buttered. Bake at 325 degrees for one hour.
Heavy Syrup
4 c. sugar
2 c. water
1 tbs. lemon juice
1 tbs. orange flower water
Boil the sugar and water in a saucepan until it is a thin string. Add lemon juice. Continue cooking until syrup forms a soft ball in cold water, or using candy thermometer, continue to boil to 22 degrees. Stir in orange flower water.
