Today's recipe comes from the kitchen of Carrabba's Italian Grill.
Ingredients for 4 servings chicken:
- 1oz clarified butter
- kosher salt and freshly ground black pepper to taste
- 4 8oz chicken breast (split, cleaned and pounded to ¼")
- flour
- 12 oz sautéed mushrooms
- 12oz dry Champagne
- 4oz cream
- 8oz jumbo lump blue crab meat
- 16 strips roasted red bell pepper (1/4"x3")
- Fresh tarragon finely chopped
To Cook Chicken:
- Heat clarified butter in lg sauté pan over high heat
- Season chicken breast with salt and pepper then dust with flour
- Reduce heat to medium and sauté chicken until golden brown on one side (about 1.5 minutes)
- Turn chicken over, add sautéed mushrooms and cook for about 1 minute
- Add Champagne and reduce for 1 minute or until slightly thickened (deglaze pan)
- Add cream sauce, salt and pepper, crabmeat, red peppers and tarragon (be careful not to break up crab meat)
- Place chicken on plate and pour sauce over top
