Champagne Chicken

Today's recipe comes from the kitchen of Carrabba's Italian Grill.

Ingredients for 4 servings chicken:

  1. 1oz clarified butter
  2. kosher salt and freshly ground black pepper to taste
  3. 4 8oz chicken breast (split, cleaned and pounded to ¼")
  4. flour
  5. 12 oz sautéed mushrooms
  6. 12oz dry Champagne
  7. 4oz cream
  8. 8oz jumbo lump blue crab meat
  9. 16 strips roasted red bell pepper (1/4"x3")
  10. Fresh tarragon finely chopped

To Cook Chicken:

  • Heat clarified butter in lg sauté pan over high heat
  • Season chicken breast with salt and pepper then dust with flour
  • Reduce heat to medium and sauté chicken until golden brown on one side (about 1.5 minutes)
  • Turn chicken over, add sautéed mushrooms and cook for about 1 minute
  • Add Champagne and reduce for 1 minute or until slightly thickened (deglaze pan)
  • Add cream sauce, salt and pepper, crabmeat, red peppers and tarragon (be careful not to break up crab meat)
  • Place chicken on plate and pour sauce over top
