Golden Sweet Potato Soup (Golden Potage)

Today's recipe comes from Joseph Smith at the Taste of Health Restaurant in the Bright Spot for Health.

Golden Sweet Potato Soup (Golden Potage)

Ingredients:
2T light olive oil
1 medium sweet onion
8 cloves garlic, minced
1 1/2 cups diced sweet potato
2 medium parsnips, chopped
2 carrots, chopped
2 medium white potatoes, diced
5 cups veggie or chicken broth
1 tsp salt
1/2 cup heavy cream, half and half or soy milk
2 or 3 tsp marjoram

Directions:
In large soup pot, saute onion and garlic in oil.  Add remaining Vegetables sans saute 10 minutes.
Add stock and bring to boil.
Reduce to simmer for 30 min or until vegetables are cooked.
Puree, then add cream, salt and marjoram.


Mashed Sweet Potatoes

Ingredients:
3 large sweet potatoes, chopped
1T butter
Salt and Pepper to taste

Directions:
Scrub sweet potatoes, peel if desired
Cover in cook pot until just covered and add butter
Boil until potatoes are cooked.
Drain, then mash.
Add salt and pepper to taste.


Baked Sweet Potato

Scrub sweet potato
Puncture with a fork two or three times
Very lightly rub with cooking or olive oil
Roast in oven at 350 degrees for about two hours or until you see the carmelized sugars inside bubbling from punctures.
