Today's recipe comes from the kitchen of John Bybee and Everett Donham, Southern Kansas Dutch Oven Wranglers
"A whole turkey roasted upright under a metal trash can. The moistest, tastiest turkey I've ever eaten.
Ingredients
- 1 (12-15 lb) turkey, thawed if frozen
- 1 Cup Chicken Broth
- 4 Tablespoons butter
- 3 Tablespoons lemon juice
- Favorite All Purpose Seasoning Rub (We use Head Country)
Directions
- Also requires: 1 Turkey Roasting Rack or Metal Stake (at least 1" thick and 20" long), Heavy Duty Aluminum Foil, 1 Injection Syringe, 1 Clean 30 Gallon Metal Trash Can that has been seasoned. Seasoned meaning heated to burn off any excess galvanize.
- 20 Lbs. Charcoal.
- Remove giblets from neck or body cavity of the turkey and also remove "pop out" as it may melt.
- Rinse turkey inside and out under cold running water and blot dry with paper towels.
- Mix 1 cup chicken broth, 4 tbsps melted butter and 3 tbsps lemon juice. Using the Injection Syringe inject the entire mixture into the turkey.
- Season the turkey with the rub (to taste).
- Place turkey on roasting rack.
- Clear a 3-4 foot circle on the ground.
- Cover the circle with heavy duty aluminum foil.
- Place turkey and rack in the center of the foil elevated to where the bottom of the turkey is 6-8" above the ground. Place small piece of aluminum foil over the top of the turkey to prevent burning top.
- Light the charcoal in a grill.
- Place the trash can over the turkey, keeping the turkey in the center and resting the trash can on the ground.
- Place ½ of the coals on top of the trash can and the remainder on the ground around the outside edge of trash can. If weather is cold or damp add more charcoal as needed.
- Cook the turkey until cooked through (1 1/2- 2 hours). Internal heat to 160°. Check with meat thermometer. Usually when the coals have turned to ash the turkey will be done.
- Remove the coals and ash from the sides and top of the can.
- Lift the can off the turkey- CAREFUL- The can will be HOT!
- Transfer the turkey to a platter and cover loosely with aluminum foil.
- Serve as desired.
