Today's recipe comes from Brad Beyer of Mike's Wine Dive in Wichita.
Ingredients:
2 cups Mango, Fresh, small diced
3T Red Bell peppers, small diced
3T Yellow Bell Peppers, small diced
2T Serrano pepper small diced
2T Cilantro Minced
3T Red Onion small diced
3T Lime Juice
Procedure:
1) Combine all ingredients on a S/S bowl toss
2) Transfer to storage container, label, date cover and rotate
Achiote Pork Rub
Ingredients:
6T Ancho Pepper ground
2T Garlic mince
1t Salt
½t All Spice
½ Cup Orange Juice
4T White Wine Vinegar
2t Vegetable Oil
45 Annatto or Paprika
Procedure:
Combine all ingredients in a S/S Bowl
Cover, label and rotate
To use, rub onto meat.
Onion Marmalade
Ingredients:
2 ea medium Red Onions
2 T Garlic Minced
2 Cups Port Wine
2 Cups Red Wine
1 Cup Orange Juice
? Cup Honey
½ Cup Balsamic Vinegar
2 t Orange Zest
1t Salt
Preparation:
1) Sweat onions and garlic until onions are translucent
2) add the rest of ingredients, bring to a boil. Reduce heat and simmer until mixture has been reduced by ¾.
