Today's recipe comes from Kevin Boyd, Java Villa, 7812 East Harry Street, Wichita.
Ingredients for crust (enough for top and bottom):
2 cups all purpose flour
2/3 cup shortening
1/4 t (a shake or two) of salt
Cut in using pastry blender
Add about 8 T ice water
Mix till moistened. Shape into two smooth disks. Roll out big enough for your pie plate.
Recipe:
3 lbs (pre-sliced) apples, preferably large Granny Smiths
Peal, slice & core them
Accumulate slices in bowl of cold water with about a 1/4 cup of lemon juice (2T salt works well also instead of lemon juice)
Drain apples thoroughly & retain in large bowl
Add:
2t cinnamon
2T corn starch
2T melted butter
1/2 cup brown sugar (packed)
1/3 cup Dark Karo syrup
1/3 cup caramel sauce or syrup
Ingredients for glaze:
1/3 cup powdered sugar
enough warm water to make a thick liquid glaze
(optional) sprinkle natural cane sugar on glaze
Instructions:
Place bottom crust in pie plate. Add apple mixture. Cover with top crust. Seal the crusts together, crimping at the seams. Cut a few vent holes in the top. Coat with glaze. Place in preheated 350 degree oven. Bake for 45 to 50 minutes.
