Swedish Pancakes

2009 Svensk Hyllningsfest King and Queen

3 eggs
2 ½ cups milk
1 ½ cups flour
2-3 tablespoons sugar
Pinch of salt
½ stick melted butter or margarine

Beat eggs well.  Add the milk, flour, sugar, salt and melted margarine.  Ladle 1/3 cup pancake batter onto a hot griddle on which butter or margarine has been melted.  The griddle may need to have more margarine put on the surface during the cooking of the pancakes.  A well-seasoned caste iron griddle will not need additional shortening (butter or margarine).

Roll the griddle to distribute the batter evenly.  Begin to lift the edges with a flat spatula.  Turn as soon as the surface is set.  Browning on the second side takes only a few seconds.  Roll the pancake around the spatula to place on a serving platter.

Serve with thickened lingonberries, lemon juice with powdered sugar, or syrup.

Homemade syrup:  Use two parts brown sugar to one part water. Bring to a rolling boil and then simmer for five minutes.  Add maple flavoring if desired.
